Born and raised in California, Sheryl Aguilar was recruited as a collegiate athlete to Utah State University and graduated in Nutrition, Dietetics and Food Sciences in 1989. For the next 20 years, she provided medical nutrition therapy as a Registered Dietitian Nutritionist for patients/clients in medical offices, hospitals, nursing homes, and athletic teams. She managed food service operations Utah and Hawaii. In 2008, she joined Dr. Michael Lefevre and the USTAR nutrition research team at Utah State University, overseeing the Research Kitchen and working on clinical trials in the Center for Human Nutrition Studies. During this time she had the opportunity to mentor hundreds of undergraduate students from Nutrition Science, Dietetics, Psychology, Biology and Interdisciplinary Studies through feeding trials (Phyto 3, Polyphenol study, TMAO study), school based interventions (Food Dudes and FIT Game), community-based interventions (Smart Bites and Diabetes Prevention) and adult (CVAIR,TR90 Weight loss study) and children (SCAN Kids, Kids Juice, Kids Bites) clinic based trials.
In 2014, she became a Professional Practice Assistant Professor and in 2018 Professional Practice Associate Professor in NDFS at Utah State University. She continues to mentor students through class research projects, Honors capstone projects, and funded research studies.
