Student Spotlight: Anneka Walton


Anneka Walton
Major: Nutrition Science

Anneka Walton is a URF studying Nutrition Science. She moved to Logan, UT from Richland, WA. She wanted to go to a university with a strong research program, and USU provided the best program for her. Growing up, her free time was dominated by science fairs and personal research. In school, since research took up much of her academic time, she has grown to love baking, cooking, game nights, and wants to get into raising chickens.

She is currently working on her Honors Capstone project where she is examining 19th century medical and cook books. She compares the religious basis of medical diagnoses at the time to the modern understanding of illnesses such as obesity and diabetes. She plans on preparing presentations and papers on this subject, culminating in a publication at some point. She is mentored by Dr. Seth Archer, an Assistant Professor in the History department.

She has served as a URF Ambassador and also spent time on the Undergraduate Research Advisory Board. She has been heavily involved in volunteer work through the URF program and has shown a commitment to supporting undergraduate research at Utah State. She is planning on furthering her education after graduation through a Masters degree in Genetic Counseling.
